What they do is pretty self explanatory and the mavericks playbook is my favorite and pretty cheap if i remember

How do they give you plays if each player has their own specific plays?

Players have play TYPES, and they access whatever plays of those types that are in the playbook you use.

Lakers, which is a copy of Warriors playbook, is affordable. Suns and Mavs are good affordable options too
